Smoked cod, kimchi, cucumber and rice vinegar pickled seaweed salad

INGREDIENTS:
2 smoked cod blister packs
1 seaweed mix sachet
1 cucumber
3 tablespoons of sushi rice vinegar
Kimchi to taste
INSTRUCTIONS:
Rehydrate the seaweed (in a large bowl filled with cold water) in water, let soak and drain. Slice the cucumber using a potato peeler, mix the seaweed and cucumber, dress with the sushi vinegar.
Serve the salad with the cod and kimchi.
