Cod chunk and Granny Smith apple skewers
200 g smoked cod loin
2 Granny Smith apples
Zest of 1 lime
Ground black pepper
1. Cut the loin and apples into 1.5×1.5 cm chunks
2. Season with pepper and grated lime zest and set aside. Sprinkle some drops of lime juice over the apple to prevent browning.
3. Place one chunk of cod and another of apple on a skewer and garnish with sprouts.
