Description
With firm and gelatinous meat, smoked is especially suitable for consuming with light dressings (sauces, spices, etc.) that do not distort its powerful smoky flavor and perfume. Low in fat (less than 2%), it is an excellent source of calcium (64 mg / 100 g). It is frozen on board, in a tunnel at -40 ºC, a minimum of 48 hours, to guarantee the prevention of Anisakis.
We recommend pairing it with Xarel·lo Penedès white wine.
