Caviar is the sturgeon roe. Caviar is so valued for the rarity and low availability of sturgeon and, of course, for being an unforgettable experience for all five senses. Of the 25 existing varieties, the best caviar is from the Caspian Sea, in Azerbaijan, Iran and Russia. Benfumat offers you 3 varieties: Beluga, Beluga Iran and Imperial.
Imperial caviar is similar to Beluga but smaller: its roe are about 3 mm. With a delicate and intense flavor and a dark gray color, it is the preferred choice of the best chefs.
