Smoked salmon loin with sesame crust

Mango and passion fruit salad with citrus vinaigrette

INGREDIENTS:

1 smoked salmon loin with sesame crust, 200 g
1 Mango
1 passion fruit
2 tablespoons minced fresh mint leaves
2 tablespoons minced fresh cilantro
2 tablespoons crispy onion bits

For the vinaigrette:

2 tablespoons lime juice
2 tablespoons Thai fish sauce (or mild olive oil instead)
2 teaspoons sugar

INSTRUCTIONS:

1. Cut the salmon loin into chunks.
2. Peel and dice the mango. Cut the passion fruit open and scoop out seeds and flesh.

For the vinaigrette:

1. Mix all ingredients well: lime juice, fish sauce and sugar.
2. In a bowl, combine the mango, passion fruit pulp, mint, cilantro, crispy onion bits and salmon. Dress with the vinaigrette.
3. Serve
